Lemon Friands

Lemon thrills your taste buds. What better to drink on a hot summer day than a glass of ice-cold lemonade? The tanginess lingers in your mouth and refreshes you; mind and body. It easily compliments your sweet or savoury dishes and takes the dishes to a different level.





So how happy would you be if you have a plethora of delicious lemon dishes in front of you. Lemon tarts, lemon cakes or lemon pies - one bite into these sweet and sour delicacies is sure to take you to cloud nine.

We have a few favourites at home, but today I opted for a simple, lazy baking. A lemon friand - a simple recipe to follow; and yet you will enjoy the delicious smooth little cakes.

Serves: 6 
Prep Time: 10 minutes
Cooking Time: 25 minutes + cooling time

Ingredients
  • 95g butter,melted
  • 30g plain flour
  • 100g icing sugar + extra to dust
  • 60g almond meal
  • 2.5 egg whites
  • 1 - 2 tsp lemon juice, freshly squeezed
  • Grated zest of 1 lemon
Method
1. Prep a 6-hole friand pan by spraying oil and placing a baking sheet (cut to size) at the bottom. Preheat fan-forced oven to 160°C.
2. Sift flour and sugar into a bowl and mix in almond meal. Place egg whites in a separate bowl and lightly froth with a fork. Add this to dry ingredients with melted butter, lemon zest and lemon juice, stirring until completely combined. Spoon mixture into the friand pan (pans should only be 1/2 to 2/3 full). Bake for 25 minutes, until golden brown or a skewer inserted in the centre comes out clean. Remove from oven, leave in pan for 5 minutes and then turn it out.

Dust with icing sugar and serve !!!
