Goda Masala/ Kohlapuri Masala Mix

This spice is essential for the prepatation of Chicken Kohlapuri - the recipe soon to follow. While my friends have vouched for the Parampara Kohlapuri Masala mix, I always wanted to prepare the masala by myself.
I got the recipe for the masala from While the author says that this is not the authentic recipe for Goda Masala, I've never wanted to go around and hunt for another recipe because this is just so good. Thank you for sharing your recipe with the rest of the world.
Preparation Time: 15 minutes + cooling time

Light fry in oil
  • 3 tsp white poppy seeds
  • 1 tsp cumin seeds
  • 2 tbsp + 1 tsp coriander seeds
  • 1 1/2 tsp mustard seeds
  • 1 tsp fenugreek seeds
  • 1 tsp black peppercorn
  • 6 dry red chilli
  • 4 cloves
  • 4 green cardamon
  • 2 inch cinnamon stick
Dry roast
  • 1 1/2 tbsp dessicated coconut
  • 1 tsp sesame seeds
  • 1/2 tsp nutmeg powder
  • 1 pinch of asafoetida
1. Heat very little oil in a pan and lightly fry the ingredients under "light fry in oil" over low flame until fragrant.
2. Dry roast coconut and sesame seeds until coconut turns light brown in colour.
3. Grind the fried and roasted spices to make a fine powder. Add nutmeg powder and asafoetida and mix well.

Store in an air-tight container in the freezer section until ready to use or use immediately.
