Basic Pizza Sauce

A good pizza sauce is an answer to a good home-made pizza. No matter what you toppings are, you need a good sauce to hold it on and to enhance it. Here is a pizza sauce that is easy to prepare and goes quite well with any toppings of your choice.

Makes: enough sauce for 2 pizzas
Preparation Time: 5 minutes
Cooking Time: 25 minutes

Ingredients
  • 1 x 400g can crushed tomatoes (vine ripened tomatoes are best)
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 2 cloves garlic, crushed
  • 1 tsp dried Italian herbs
  • 1 - 2 tsp chilly flakes (optional)
  • Salt and pepper to taste
Method
1. Place tomato, olive oil, balsamic vinegar and garlic in a saucepan over medium heat. Season with salt and pepper. Bring to boil. Then simmer it over low flame, stirring occasionally, until sauce thickens (around 25 minutes). Add chilly flakes, if required, to taste and mix well. Cool completely.

Note:- This sauce can be refrigerated for up to 2 weeks. After bottling the sauce, pour some olive oil to cover the top surface and then refrigerate. Drain off this oil before using.

    Kitchen Queen - you get that red colour if you use vine-ripened tomatoes. I used the canned variety. They have deeper red colour than the other varieties.
