Hi Friends,
Mexican food has a widely diverse
history that started with the native Mesoamericans. After the Spanish conquest
of the Aztec Empire, new spices, diets and cooking techniques from Europe,
especially Spain, were introduced into the cuisine. And finally, there are the
Americanised versions of Mexican dishes, which have gained popularity
world-wide.
Mexican cuisine is complex with Corn, Chilli Pepper, Chipotle, Onion, Garlic, Cumin, Oregano, Cinnamon, Cloves, Anise, Cheese, Epazote/ Mexican tea (used to flavour beans) and Cocoa (used to flavour meat) being some of the basic spices that makes the cuisine more bold than spicy.
Julie of Erivum Puliyum has started a new series this year - Flavours of Cuisines. This will be a monthly event and Julie
has graciously granted me the opportunity to host the series for the month of
February with Mexican Cuisine.

Let us try to use these different flavours to come
up with some interesting Mexican recipes for this month and to participate in
the event.
The event rules are as follows-
1. The event runs for the period of February 1 to February 28, 2013.
2. The theme for
this month is Mexican Cuisine. Your dishes can vary from starter,
main dish, side dish, soup, dessert or any other recipes, sweet or savoury, anything
as long as it is strictly part of Mexican Cuisine, with
their ingredients & spices. No modifications, fusions or alterations are accepted.
(Recipes which do not follow this rule will not qualify for the event).
3. Bloggers and Non bloggers can participate. Bloggers can link their
recipes using the linky tool. Bloggers who find it difficult or find some
problem with the link & Non-bloggers can send in their recipes to lovetoexp(at)gmail(dot)com with the following details-

4. Recipe must be linked to (My FoodTreasures event announcement page/ this page) and
to (Erivum Puliyum event announcement page / Julie's page).
5. Both Vegetarian
and Non-vegetarian recipes
are accepted.
6. Send in any number of entries. You can link in two old
or archived posts; not required to re-post it - just add the link & logo.
7. Usage of logo is
appreciated for all entries as it would help spread the word.
There are 4 awards which will presented to the eligible participants - Participation Award to all, Best
Non-veg Recipe Award (based on the authenticity, health
effectiveness & presentation), Best Veg Recipe
Award (based on the authenticity, health effectiveness &
presentation) & Top Contributor
Award.
So folks,
put on your Mexican hats, think tight, do right and link in your recipes before
