Vada Kootu Curry

Busy cooking. But yet couldn't let this day pass without the Trivandrum-style Vada Kootu Curry...


Serves: 4 - 6
Preparation Time: 10 minutes (if you are happy to buy store bought vadas)
Cooking Time: 15 minutes

Ingredients
  • 5 medium medu vada (uzhunnu vada), each cut into 4 pieces
  • 2 medium potatoes, cut into medium cubes
  • 1 small onion, sliced
  • 2 green chillies, slit
  • 1/2" ginger, crushed
  • 1 sprig curry leaves
  • 3 - 4 whole red chilly
  • 1/2 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 1 tsp kashmiri chilly powder
  • 1 - 1 1/2 tsp coriander powder
  • 1/4 tsp pepper powder (adjust to taste)
  • 1 tsp garam masala
  • 1 - 1 1/2 cup thin coconut milk
  • 1/2 cup thick coconut milk
  • salt to taste
  • 2 tbsp coconut oil
Method
1. Heat oil in pan over medium flame. Splutter mustard seeds and add onion, ginger and green chillies and stir until onion becomes translucent. Add curry leaves and whole red chilly and stir for an extra minute. Add turmeric powder, chilly powder, coriander powder, pepper powder and garam masala and saute until the spices are roasted. Add potato and stir for a minute. Add thin coconut milk with salt and cook potatoes over medium flame until well done. Now add  medu vada pieces and mix well. Finally, add thick coconut milk and remove from flame as soon as it starts to boil.

Serve hot with rice for sadya.
