Heuvos Rancheros/ Mexican Rancher's Eggs

Heuvos Rancheros is a popular Mexican breakfast and simply means Rancher's Eggs. The dish consists of eggs fried in rancher's sauce served with tortilla, frijoles refritos, avocado or guacamole and sometimes Mexican-style rice and is usually served in farms in Mexico more as a brunch than a breakfast. So this was our weekend breakfast and a spicy, filling way to gobble up a heavy breakfast instead of the "boring" Big Breakfast! (Look who's talking!)

This is an easy breakfast or brunch or rather lunch, I would say and there are different versions of preparing it the Mexican way. I have again followed the recipe from Perfect Mexican from Parragon Publishers which doesn't boast much about itself, but believe me, some of my best Mexican recipes have come from this book. It was the first recipe book my boys gave me on my birthday a few years ago, when they had just started to love Mexican food and knew that their Mum had to come up with a few of the dishes to satisfy their mex-cravings....

Preparation Time: 5 minutes
Cooking Time: 20 minutes

For Ranchero Sauce
  • 1 x 400g canned chopped tomatoes
  • 1 small onion, chopped
  • 1 large jalapeno, seeded and chopped
  • 1 garlic clove, crushed
  • 1 small red capsicum, chopped
  • 1 tsp paprika
  • 2 tsp oregano, dried
  • 1 tbsp lime juice (adjust to taste)
  • Salt and pepper
  • 1 tbsp oil
Other ingredients
  • 2 large eggs
  • handful of cheddar cheese, grated (optional)
  • 2 tbsp oil
  • 4 small tortillas, heated, to serve
  • mashed avocados, as required, to serve
  • frijoles refritos, as required, to serve
1. For Ranchero Sauce - Heat oil in a pan. Add onion, jalapeno and garlic stir until softened. Add capsicum and continue stirring until it softens. Add canned tomato, paprika, oregano and lime juice. Season to taste and bring to boil. Then simmer for another 5 minutes. Add little more lime juice or plain water, if the sauce becomes too dry.
2. In a flat bottomed pan, heat 1 tbsp oil. Crack an egg to make a sunny-side up. When the egg is almost done, pour some of the ranchero sauce around the egg. Continue cooking. Top with some cheddar cheese and as soon as it melts transfer on to a plate. Continue with the other egg.

Heat hot heuvos rancheros with tortillas, mashed avocados and frijoles refritos.
